Buckwheat Buttermilk Pancakes (Tom James)

  • 2 cups buttermilk
  • 1/4 cup oil
  • 2 Tablespoon molasses
  • 2 eggs
  • 1 cup flour
  • 1/2 cup buckwheat flour
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 1/2 teaspoon salt
  1. Beat eggs
  2. Mix in other wet ingredients
  3. Separately combine dry ingredients
  4. Mix dry ingredients into wet
  5. Pour onto heated griddle or frying pan at medium heat
  6. Turn over when edges are dry and bubbly, and finish cooking until other side is a dark golden color
