Desserts!


Peach (or Berry) Cream Pie (Lee Perry)

  • Pastry lined pan or pie crust
  • 4 cups fresh berries or peaches, cut into slices
  • 2/3 cup sugar
  • 4 Tablespoon flour
  • 1/4 teaspoon cinnamon
  • 1 cup cream

Variant # 1:

  1. Place fruit into crust
  2. Mix remaining ingredients, the pour over fruit
  3. Bake at 400 degrees for 35-40 minutes

Variant # 2:

  1. Pre-bake crust: cover with foil and pie weights, bake for 6 minutes at 425 degrees
  2. Remove foil and weights, and brush with egg wash (mixed egg and water)
  3. Bake for 5 minutes at 375 degrees, until opaque
  4. Then add fruit followed by other ingredients
  5. Continue to bake 375 degrees for 30-40 minutes

Hot Fudge Pudding (Lee Perry)

  • 1 cup flour
  • 2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup sugar
  • 1 1/2 Tablespoon cocoa
  • 1/2 cup milk
  • 2 Tablespoon melted shortening
  • 1 teaspoon vanilla

Topping:

  • 1 cup brown sugar
  • 1 Tablespoon cocoa
  • nuts (1/2-1 cup)
  • 1 1/2 cups boiling water
  1. Preheat oven to 350 degrees
  2. Sift flour, baking powder, salt, sugar and cocoa together
  3. Gently stir in milk and melted shortening
  4. Add vanilla and pour into 8" x 8" pan
  5. Sprinkle brown sugar mixture over top
  6. Pour in boiling water
  7. Bake for 40 minutes

 


"Aunt Marcia's" Chocolate Cake with Chocolate Icing

  • Grease and flour a 10" X 14" baking dish and set aside

Chocolate Cake:

  • 2 1/2 cup sugar
  • 1 cup shortening
  • 2 eggs
  • 2 1/2 cup flour
  • 1/2 cup cocoa
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 7/8 cup boiling water
  • 2 teaspoon baking soda
  • 1 teaspoon vanilla
  1. Grease and flour a 10" X 14" baking dish and set aside
  2. Blend sugar and shortening together
  3. Add eggs and beat well
  4. Blend in flour, cocoa, salt
  5. Beat in vanilla and soda
  6. Add buttermilk and water; beat until smooth
  7. Pour into pan
  8. Bake at 350 degrees for about 40 minutes

Chocolate Icing:

  • 2/3 - 1 cup powdered sugar
  • 1 cube butter 1/2 cup cocoa
  • Dash of salt
  • 1 teaspoon vanilla
  • Warm water
  1. Blend powdered sugar and butter
  2. Add cocoa, salt and vanilla
  3. Slowly add warm water while mixing, until it reaches desired consistency

See's Fudge (1998 Perry Christmas Award-Winning Fudge)

  • Grease 9" X 12" glass baking dish and set aside

Gather in a large mixing bowl and set aside:

  • 18 oz. semi-sweet chocolate chips
  • 2 sticks butter, cut up
  • 8 oz. marshmallow bits (miniatures)
  • 1 cup or so of vaguely chopped walnuts*

Bring to a rolling boil:

  • 4.5 cups sugar
  • 13-oz. can evaporated milk
  • 1/8 teaspoon salt
  1. Boil over medium heat for 7 minutes, STIRRING CONSTANTLY! (It helps to have two people stirring)
  2. Pour boiled solution into bowl with chocolate chips, etc. and beat with electric beater until all ingredients are melted and thoroughly mixed (a few minutes)
  3. Finish beating with a wooden spoon
  4. Add 1tsp. vanilla when mixture is cooler
  5. Pour into 9" x 12" greased baking dish and let cool several hours before eating
  6. Cut into modest-sized cubes and serve Refrigerate leftovers

*Using walnuts, which are of course optional, is a good way of keeping walnut-hating kids from eating all the fudge before the adults can.
